Sweet Potato Veggie-Mince Pot

Delicious, healthy, and easy to cook. This vegetarian dish will soon become a regular favourite. What’s more you can easily adapt it for meat-eaters, add some new ingredients, and change it to have that little bit more cheese.

Cooking time: 20-25 mins
Total time: 50-65 mins

 

Ingredients:

2 onions

1 red pepper

300g soya mince

5 tbsp olive oil

3 medium carrots

3 large pinches of ground pepper

2 large pinches of salt

1 large sweet potato

Gravy mix: check it’s meat-free. Then make as advised on the packaging. Otherwise: 4 tsp heaped gravy granules & 250ml boiling hot water.

(Optional: 30-40g cheddar cheese grated)

 

Recipe:

  1. Prep: Chop the onions and red pepper.
  2. On medium heat place the soya mince and onions into a saucepan, along with three tbsp of olive oil. Stir occasionally for about 10 minutes.
  3. In between stirring chop two of the carrots into small circles. With the other carrot peel into thin slices.
  4. Add the red pepper and the carrots to the soya mince, stir well and add another tbsp of olive oil.
  5. Mix the ground pepper and salt into the saucepan and add another tbsp of olive oil
  6. Leave on a low heat setting for 10 minutes stirring occasionally.
  7. Make the gravy powder using the instructions of the brand, or our tip on gravy: Place the gravy mix into a small pan on medium heat, add a bit of hot water at a time (should be around 250-300ml total) and stir until almost thick in consistency.
  8. Set the oven to 200°C Fan.
  9. Take the mince-mix from the saucepan, and place in a deep pie-dish, pour the gravy over the top.
  10. Next, peel the sweet potato and cut into circles the thickness of a coin. Layer the sweet potato over the top of the mince till covered. Cook for 20 mins.
    Optional: Take the pot out and place some grated cheese on top. Cook for another 5 minutes.
