Get your teeth stuck into these golden oatmeal cookies, sweet, chewy and with a smell of sweetness you’ll want to fall into.

Ingredients:
130g butter
120g brown sugar
20g demerara sugar
90g granulated sugar
2 eggs
1 tsp vanilla extract
120g self-raising flour (plus extra for coating)
Pinch of salt
1 tsp baking powder
140g oats
Optional: raisins 80g
Recipe:
- Line the tray in baking parchment, and set the oven to 170°C Fan.
- Cut the butter into cubes, and microwave for 20 seconds to soften.
- Sieve the brown, demerara and granulated sugar into a large bowl. Then add the butter and mix together. Whip till it’s like thick cream.
- Beat in the eggs, and mix in the vanilla extract.
- Add the flour, salt, baking powder and oats – mix well.
- Optional: add the raisins
- On a side plate place a couple of tablespoons of flour. Then take a heaped teaspoon of the cookie mix and roll this into the flour, forming a ball, and giving it a very light coating of flour – which helps to hold its shape.
- Place the cookies about 4-5cm apart on the baking parchment, and cook for 10-12 minutes till light brown.
- Leave to cool and set.
